  2. Provide 2 cup Brown sugar
  3. Take 3 Jumbo eggs
  4. Take 1 1/4 cup Molasses
  5. Prepare 4 1/2 cup Flour
  6. You need 4 tsp Ginger powder
  7. Provide 2 tsp Baking powder

  1. In a separate bowl, mix together the flour, baking powder, bicarbonate of soda, the three gingers.
  2. Add dry ingredients to butter mixture slowly, making sure to mix well. Cover and place in refrigerator for at least two hours. Can be left overnight.
  3. In a processor with paddle attachment mix together butter and sugar until creamy. Add eggs and molasses. Mix very well. You will have to scrape away from sides now and again.
  4. Roll teaspoon full into balls. Dip in extra sugar to add shine and space well on greased tray (to cut down on cleaning I use baking paper on my tray) bake at 180°F C for approximately 10 minutes.
  5. Allow to cool slightly before removing with egg lifter as I cookie is still very soft. Allow to cool on counter or rack completely before storing in airtight container or cookie jar
