- Provide 150 ml brandy or rum
- You need 500 g dried fruit
- Provide 100 g glace cherries
- Provide 250 g brown sugar
- Take 175 g butter/margarine

- Get 1 teaspoon baking powder

- Beat eggs and pour into sugar/fruit mixture. Stir. Add baking powder and mixed spice into flour. Pour into sugar fruit mixture and stir until mixed in.
- Leave cake in the pan to cool for at least 20 minutes. Turn out from pan and allow to cool. Wrap cake and feed with brandy once a week.
- Spoon batter into pan and bake until cake is done (when a toothpick inserted in the middle comes out clean)
