The ingredients needed to prepare Walnut burfi:
- Take 150 gms Walnuts
- Provide 150 gms Sugar
- Provide 1/4 cup Water
- Take 2 Tbsp Clarified butter (ghee)
- Get 2 Cardamom
Steps to make Walnut burfi:
- Soak walnuts for 2hrs. Strain and grind coarsely.It is advised to use the slow speed button or you can use the pulse button as well. The whole idea is to not grind the walnuts finely.
- Grease the thali with ghee and keep aside.
- Empty the walnut paste in pan. Add 1 tbsp ghee and fry for 3 to 4 mins.Keep stiring and put off the flame. You can transfer the walnuts to another vessel as the pan is still hot and can burn the walnuts.Or keep stirring it after removing from the gas to prevent the walnuts to become crispy and over roasted
- Take sugar and 1/4cup water and heat. Keep stirring on slow to medium flame.
- When it starts boiling..the sugar solution becomes clear.Keep stiring and check for 1 thread consistency.Keep checking occasionally after every minute.When one thread consistency is reached,put off the flame.
- Add the sugar solution to the walnut mixture.Keep stiring on a slow flame for a minute. We can stir the walnut mixture without the flame if it is too thick.
- When the barfis are set…cut into squares and store it in a air tight container.
- When the mixture starts thickening,transfer it to the greased plate.
- We can adjust the amount of water by two to three spoons…less or more, depending on the consistency of walnut and sugar mixture.If the mixture is too flowy,we can further cook the walnut-sugar mixture for 1minute or less, depending on the consistency. Don't make it too dry, otherwise the burfi will become brittle.
- RECIPE NOTES-Soaking of walnuts is very important. Soaking helps to enhance the flavour of walnuts and reduces it's bitter aftertaste. We can eat walnut burfi in summer also if we soak it.
- Make the sugar syrup on a slow flame.If we make sugar syrup on high flame, the syrup will crystallise from sides and thus burfi will taste of sugar.
